Simple Snickerdoodles

I love finding delicious dessert recipes that only use ingredients I already have in my pantry! I wanted to try a batch of Snickerdoodles, but every recipe I found called for Cream of Tartar - until I found this one!! The cookies baked up light and crisp, with just the right amount of sweetness. Win!


Snickerdoodles WITHOUT Cream of Tartar - courtesy Frugal Village Forums: "Snickerdoodles
(from Martha's Holiday Cookies 2005)

makes about 20 (or 40, if you make the balls very small)

2 3/4 cups all purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 cup (2 sticks) unsalted butter, softened
1 1/2 cups sugar
2 large eggs

2 tablespoons sugar
2 teaspoons ground cinnamon

1. Preheat oven to 350F. Sift together flour, baking powder and salt; set aside. Put butter and 1 1/2 cups sugar in the bowl of an electric mixer fitted with the paddle attachment. Mix on medium speed until pale and fluffy, about 3 minutes. Mix in eggs. Reduce speed to low; gradually mix in flour mixture.

2. Stir together cinnamon and remaining 2 tablespoons sugar in a small bowl. (at this point I needed to chill the dough for about half an hour) Shape dough into 20 (1 3/4-inch) balls; roll in cinnamon sugar. Space 3 inches apart on baking sheets lined with parchment paper.

3. Bake cookies, rotating sheets halfway through, until edges are golden, 12 to 15 minutes.

Eggs: $0.30
Cinnamon, salt: $0.10

GRAND TOTAL: $2.19 for about 2 dozen cookies!

Oatmeal-Cornflake Cookies

Yes, you read that correctly - two great breakfast treats in one! I found this recipe on Recipezaar - I had a hankering for a cookie and was out of chocolate chips. I did a quick search and these piqued my attention - they were easy, fast, and VERY yummy. The cornflakes add a little crunch to the cookie, and a little sweetness as well.

You can substitute applesauce for the oil, and I added the cinnamon for some extra flavor. These would lend themselves well to add-ins like dried cranberries, raisins, or chopped peanuts!

Oatmeal-Cornflake Cookies

Ingredients:
1 3/4 cups flour
1/2 teaspoon baking soda
1/2 tsp cinnamon
1/2 teaspoon salt
1/2 cup quick cooking oats
1/2 cup crushed corn flakes
1/2 cup butter
1/2 cup sugar
1/2 cup brown sugar
1 egg
1/2 teaspoon vanilla
1/2 cup vegetable oil

Directions:

Preheat oven to 350 degrees.
Sift together flour, baking soda, cinnamon and salt; stir in oats and cornflakes. Set aside.
Cream butter and sugars. Add egg and vanilla, then oil. Mix well.
Add flour mixture; mix well.
Drop by spoonfuls onto ungreased cookie sheet.
Bake 10 to 12 minutes.
